I'm not on TikTok - I waste enough time on the internet and I know it would be addicting for me if I started looking at it. Anyway, I read this recipe went viral on there but I followed the instructions from this site. What I used:
- 2 lbs baby potatoes, cut in halves (I used a mix of yellow & red)
- 1.5 lbs organic green beans, halved
- 1.5 lbs double smoked farmer's sausage, sliced in rounds
- 1 large sweet onion, diced
- 2 tablespoons Creole/Cajun seasoning (my Cajun was hot, my Creole was mild and I used 1 tbsp of each)
- 1/2 cup unsalted butter
- Fresh cracked pepper, to taste
- Pecorino Romano cheese, grated for garnish
I saw looking at other recipes they used broth but I liked this one as it did not. The only water came from whatever clung to the rinsed beans/potatoes.
I layered it with potatoes down first, half the seasoning and then the butter.
Next I added the beans/onions and the rest of the seasoning.
The sausage layer went on last. I had to take all the sausage off and add the onion I forgot, but I'm glad I remembered.
I set the crock pot on low for 8 hours. I didn't touch it and left it alone till halfway through (below). The house smelled like I was cooking Polish sausage on a grill with sauerkraut.
At 6 hours the potatoes still weren't done 🤔, but then they were at 8 hours.
The dish really does look like swamp life so the name is appropriate.
This tasted very good and thankfully not too salty, that's why I added the Pecorino as cheese always makes things even better.
The smoked sausage is key to the flavor and the onions surprisingly tasted like they were caramelized. That bonus gave the swamp water a really enjoyable taste. The dish was comfort food and it made dinner very easy in the hot summer household without using the stove/oven. It won't go into my dinner rotation, but at least it was a stress free, cozy meal with minimal time and effort.
