Raspberry Jam Oatmeal Bars

Son loves oatmeal anything and I had company company for dinner so thought this would accomplish a couple of things, dessert, breakfast and treats for everyone.  There were oodles and oodles of recipes online and I decided on this one.  What I used:

  • 1 ½ cups (3 sticks) unsalted butter softened
  • 2 cups packed brown sugar
  • 3 cups old-fashioned rolled oats
  • 3 cups unbleached all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 3 cups raspberry jam (bought at Costco, so used a lot because there was a lot!)

Preheat oven to 350°F.  Grease a 9×13-inch baking pan. Set aside.  In stand mixer with paddle attachment, cream together butter and brown sugar until smooth.  Add the vanilla extract, rolled oats, flour, salt, and baking powder and mix again on low to combine. Scrape the bottom and sides of the bowl occasionally with a rubber spatula.  Press half of the oatmeal mixture into the bottom of the prepared pan. 


Spread the jam over the bottom layer.


Dump the remaining oatmeal mixture over the raspberry jam layer and spread evenly.


Bake for 45 minutes, or until lightly golden brown and the jam is bubbling. Cool completely before cutting into bars.


These were pretty good.  An excellent jam would be a good idea, this one was not great.  I found them sweet on the borderline of being too sugary.  Son didn't mind them at all and only commented that they were yummy.  Not sure what company thought as neither persons let me know so guessing they weren't enjoyed?
