Easter Sunday brunch 🐰! I found this recipe here and it sounded easy enough to put together as I had to do dinner AND dessert, all homemade as well. I did a few things on Saturday to make life easier. I edited the recipe to design it just for the two of us (4 servings).
Cooking is my hobby and I love it. It relieves my stress. I use recipes as a base line...I find a few and compare. Then I make my own personal concoction from what I've learned. This blog has become my personal cooking journal. It helps me remember what I've made/liked and didn't. But mostly, this is for my son. I hope he makes some of these dishes one day...One of the nicest things he's said to me is that he's never had a bad meal with me, at home or at a restaurant (research wins!).

Sugar Free Cornbread Corndog Muffins
I saw this on a cooking show and wanted to make them. I had hot dogs in the freezer and they were wrapped individually so was good for the recipe. Lemon Curd
I recently re-discovered this delicious treat and love it. One of the few sweets I cannot say no to. I had to try making it myself. The one I bought was not only expensive but also hurt-your-teeth sweet! I found a few supposed "easy peasy" recipes and made 3 cups as I wanted to gift some as well. I even bought mason jars for it. Spicy Shakshuka With Feta Cheese (Eggs in Purgatory)
I've always wanted to make shakshuka. I've seen it on food t.v. for years now. The opportunity presented itself to me in an easy manner. We had lamb shanks last night for dinner and I had all this tomatoey gravy leftover and so it became shakshuka sauce today with a couple of edits. My sauce had herbs, onion, garlic, carrots and "Bianco DiNapoli" crushed tomatoes. I guessed there was about 2 or 3 cups there. To make it compliant for this dish, I added:

Caci-Oat Pepe
