Easter: "Butter Chicken" Turkey Breast

I was inspired to make this from a show I watched during the "lockdown phase" of the pandemic with Selena Gomez.  I ended up doing my own creation as I didn't have all the spices on hand that chef Aarti used and I also had a netted turkey breast.  And, I just wasn't invested in spending as much time as was done on the show, I wanted an easier way.  I bought a meat injector specifically for this experiment, bwahaha.

"Juicy Lucy" Turkey Burger

I took extra-lean turkey out of the freezer for dinner.  After thinking on it all day I decided I wanted a burger, though being honest, I don't love turkey burgers.  So, I decided to stuff it with cheese.  I used toasted brioche buns to serve them on, and oh yeah, bacon for the topping because we all know bacon makes everything better...

Italian Turkey Meatball Subs

I was really craving meatballs but not sure how I wanted them served.  I was debating "Swedish", "Asian" and the good ole "Italian" with spaghetti.  In the end, I decided to make subs on fresh baguette for the first round.  (I had mozza that needed to be used).  Costco started selling "Rao's" marinara sauce so my workload got a little easier using a jar of it... I was worried they'd be dry because they were so lean so I decided to incorporate some bacon in it.  What I came up with:

Turkey Vegetable Barley Soup

I made the turkey stock yesterday and added a bag of duck bones I had in the freezer to it as well.  This simmered all day for about 8 hours. I strained it and let it cool in the fridge overnight.

Well I was excited when I saw a local grocery store selling King's Hawaiian Rolls.  My co-worker would get them in Washington state for me on occasion but it was nice to see them available in Canada.  $3.99 for 12 at Save On Foods.

Thanksgiving Turkey Soup

I've already posted about this soup previously.  Because I am giving this to a few people, I thought I'd post how I made it this time.  I made the stock the day before and let it cool in the fridge so I could skim the fat off.  It was made with the neck, bones, bay leaves, parsley, rosemary, thyme, savory, onion, carrot, celery,  cayenne pepper and S&P.  I simmered it for 8 hours and strained it through cheesecloth.

Every year I like to try new stuffing recipes and this time I was inspired by this one.  I made it my own though but did use the main ingredients.  I go to this bakery by my office which only makes Challah Bread on Fridays.  I ran over at early coffee break as it often sells out by lunch. This post is a bit of a mess, it's over two days and turkey day I was scrambling and not as organized as I would have liked...

Skillet Ground Turkey, Quinoa Macaroni & Cheese

I've never seen this at Costco before but when I did last week, I had to buy it to try it.  I've tried pasta made from chickpeas (my fave), quinoa with brown rice (my 2nd fave), 100% whole wheat (good), ancient grains (good), black beans (meh) and red lentils (not a favorite).  Time to try macaroni quinoa with some organic white rice flour and two quinoa flours. I have a feeling I'll prefer the brown rice one I tried from Trader Joe's - though it is fusilli and I wanted macaroni today...

Chinese Hotdish

On Food Network Canada television, I recently found her (Molly Yeh) show, and I adore her.  I don't usually like the women on that channel, so that's saying something. 😏 .  I started following her on Social Media and made this recipe, sort of...and I laughed out loud while reading it when she said "Chinese Hotdish" was her stripper name.  I don't really like to cook Friday nights, but this was super easy though I did add some extra prep time, but hey, I did it!  It was in the oven in about a half hour.

Kentucky Hot Brown

I LOVE 💗this sandwich.  I've even had it in Kentucky but not where it originated at the Brown hotel in 1926.  I also had it at one of Chef Bobby Flay's restaurants in NYC, which is now closed.  It was soooo good.  Comfort hangover food is how I'd describe it.  I don't have a picture of Bobby Flay's but I do have two.  The first one below is at a winery in Ohio.  We sat overlooking the Ohio river which is in Kentucky.

Ground Turkey Shepherd's Pie with Roasted Garlic Cauliflower Mash

I was at Costco and bought a bag of cauliflower florets.  I decided to make a pseudo Shepherd's pie which is one of my favorite comfort foods.  I remember reading somewhere that nutritional yeast helps the texture and flavor of cauliflower mash, so I added some of that.
