My good friend in Nashville said her mother wasn't a great cook while she was growing up but her favorite food memory was her coconut cake. I had the pleasure of meeting her mother while in town recently and asked her for the recipe so I could recreate it for my son who loves it. She went on the hunt for it and sent me this picture telling me she'd have to decipher it for me as it was so faded.
Cooking is my hobby and I love it. It relieves my stress. I use recipes as a base line...I find a few and compare. Then I make my own personal concoction from what I've learned. This blog has become my personal cooking journal. It helps me remember what I've made/liked and didn't. But mostly, this is for my son. I hope he makes some of these dishes one day...One of the nicest things he's said to me is that he's never had a bad meal with me, at home or at a restaurant (research wins!).

Red Lentil Bread
I was curious to try this high protein/high fiber lentil bread. I haven't had great luck at gluten free breads, usually a weird taste/smell to them. Anyway, this was super easy so I thought, why not? I added some "Everything Bagel" seasoning to both the top and the inside for more flavor. I also added organic unsalted raw pumpkin seeds to the top.
