Wild Black Cod (Sablefish) Broiled with Miso

Canned Salmon & Yam Fish Cakes

I wanted fish cakes tonight and was only going to use what was in my house without going out for anything as it is my last day of vacation.  That meant instant mashed potatoes or yam, so I went with the yam.  I roasted my garnet yam after I scrubbed it well and then dried it.

Had a best friend from high-school coming over for dinner and it's been over 20 years since I've seen her.  I asked her what she wanted me to make and in our brief discussions about food, she said she'd be interested in eating something from the Mediterranean diet.  I prepared this salad to eat with the cod.

Bouillabaisse

One of my dreams is to travel to Marseille and have Bouillabaisse there.  I viewed a LOT of different recipes.  In the end, I did my own thing, with what I had.  I made a rouille (I added a fire-roasted red pepper) too and used it on toasted slices of potato bread.  My seafood was frozen except for the shrimp.  What I used:

Baked Steelhead Trout with Maple Glaze

I like farmed steelhead trout better than wild salmon (I don't eat farmed salmon).  There, I said it and I mean it.  We cook this all the time.  Normally we just do it very simply with S&P and pan fried in a little olive oil. The crispy skin is our favorite part.  My son picked up a huge pack at Costco yesterday, so I decided to bake it this time.  Leftovers are great cold, in salad - even in sandwiches as well...

Steamed Cod & Veggies in Foil Packet

Ouch, it is a scorcher outside today 🔥 and the heatwave is expected to continue for a week I heard.  No oven, no stove today.  I decided to make a foil package for the BBQ grill.  I bought what looked appealing to me in the grocery store this afternoon and finished off some fridge items from home.  The cod looked really nice and fresh.  I got the butcher to wrap me up piece from the ice display.  What I made tonight is how I like to eat when trying stay healthy, the Mediterranean diet.

Grilled Cedar Plank Steelhead Trout

I have never used cedar planks and was so excited when I saw them at Costco.  I quickly scooped them up.  The packaging said they could be recycled with yard trimmings too.  It said to soak them for a half hour, but I did it for two hours in cold water, just to be sure.  A co-worker was telling a funny story of how they didn't know to soak them and were surprised when a massive fire broke out on the BBQ.  😲

Bagna Càuda (Hot Garlic and Anchovy Sauce) with Crudités

In the last couple of times I've dined out, I've been served Bagna Càuda.  And, both times I fell in love with it (different renditions), and decided I had to make it.  It became my weekend plan.  I based mine on this recipe.  It turns out that this dish originated in Piedmont, Italy and dates back to the 16th century.  As Piedmont is a place I plan to visit, I was happy to know that I'm already enjoying food from there, here locally.

Baked Sockeye Salmon with Pistachios and Garlic Cilantro Sauce

I had a wild sockeye salmon filet in the freezer that I took out.  I was looking for ideas and found this recipe and it looked great.  It's tricky with my son, because I would use fresh dill on the salmon every time but he dislikes it so much that I had to find an alternative.  I put my own spin on it and make a couple tweaks...I was very jealous of her cast iron baking dish though, I must say...

Codfish Noodle Casserole

I had LOTS of leftovers from last night's dinner.  I decided to do something really easy and make a casserole out of it tonight.  I sprayed a non-stick 13" x 9" baking pan with "Pam".  I flaked the cod and I fished out all the green beans as I didn't want them in there.

Back on Track:  My breakfast/lunch at work today was a homemade beet, grape tomatoes, quinoa, arugula, dried apricots, walnut salad with a tiny bit of goat cheese.  I dressed it with olive oil and vinegar dressing.

Blushing New England Fish Chowder

It's been a tough week.  I wanted something comforting but healthy.  I saw this soup and wanted to make it.  The "heat wave" was looking to end or at least cool down a little and soup to me is always comfort food.  I did a couple of changes/edits which are detailed below in my choice of ingredients.  It looks like a lot of stuff but I thought this recipe was not taxing on my time at all.

Fisherman's Stew

I had these frozen cod fillets in my freezer from Costco and I thought maybe a good way to use them would be to make a fish soup or stew.  I was going to add some prawns but ultimately decided I'd leave them out tonight, but I'm sure they'd be great too - any seafood would be good.  I also was going to zest some lemon or lime but got lazy, so didn't end up adding that.  I kept the liquids to a minimum as it is my experience that any thawed frozen fish exudes tons of water.

Fish Tacos

I bought some Pacific Snapper today and decided to make fish tacos with corn tortillas.  I bought pre-packaged slaw and dressed it lightly with Hidden Valley Ranch dressing.  I added in a diced jalapeno pepper with seeds and cracked fresh pepper over it.
