Pecan Pie Brownies

This is the time of the year my Costco always has these "Ghirardelli Brownies" box mix in stock.  I don't eat them but my son does so I bought them for him.  I decided to try and perk it up by making a topping and found this recipe.   I subbed maple syrup for the corn syrup.

Easter Impossible Pie: Dark Chocolate with a Coconut Twist

My neighbor friend sent me this recipe and a picture of how hers turned out suggesting I give it a try.  This seemed right in my son's wheelhouse, so I made it for Easter dessert this year.  Since I like her pie dish so much, I'll show hers, and I'm always so happy when friends send me their food pics.

White Chocolate Orzo Pudding

I saw this on food t.v. and it looked delicious and easy, especially if you like rice pudding which we do.  I halved the recipe being that there was only two of us and had to improvise a little with the ingredients.  I had leftover Italian white chocolates from a Christmas box, so that's what I used instead of white chocolate chips.  What I used tonight:

Coconut Macaroons with Dark Chocolate Drizzle

I used to have a co-worker that did my Christmas baking for me.  As it's not something I love to make or eat, it worked out well for me.  This year the only person doing any baking for us will be us.  We do make shortbread, but nothing else.  I found this recipe and it looked easy which is right for me when it comes to baking.  And, my son loves anything coconut...

Death By Chocolate Pie

This was dessert for my son tonight.  I had intended to make it for Thanksgiving, but ran out of steam...  I had all the ingredients so wanted to do it before the cream went bad.  I made the crust and the filling the night before as there is a long period of time that it needs to set.

Dark Chocolate Nut Clusters with Sea Salt

I forgot to buy my son dark chocolates for Christmas and I always do that for him.  However, I do know that the nut ones are always his favorite.  I came across this and based what I did from her recipe.  It was pretty easy, just almonds, pecans and walnuts.  I happened to have all three (from Costco) in my fridge too!  Dip them in melted dark chocolate, stack and when almost cool, sprinkle with Maldon sea salt.

Candy Cane Christmas Sleighs

One year on "facebook", I saw a friend make these with Moritz Icy Squares.  I was fascinated by them.  I thought they were adorable.  Tis the season, and I saw them at Costco so picked them up.  I googled and it said there should be 90 squares in the container, so that gave me 7 to use per sleigh, though I only used 6.

Salted Dark Chocolate Tart

This tart looked easy to make, and my son is really into "salted chocolate",  especially dark chocolate.  So I thought I could surprise him with a rare after dinner dessert.  It's "Family Day" here in British Columbia, so this is a stat holiday and I made this in celebration of my family - which is my son.  💕 I also took him out for "dim sum" for brunch, as it is a splurge that rarely happens anymore with our work schedules.  I liked that this had no dairy and used almonds for the crust - healthier and gluten-free.  My pictures will never be close to the ones in the recipe.  Hers are always amazing.  Her recipes are great in the ones I've tried so far too.  Anyway, my "point and click" cheapo camera will never be in the same league as those shots!  I don't do this for a living though either...

I made this for Christmas Day dessert.  It didn't seem complicated and that is my kind of dessert, if I have to make them.  I bought the Dulce de Leche pre-made in the can which made it even easier.
