Death By Chocolate Pie

This was dessert for my son tonight.  I had intended to make it for Thanksgiving, but ran out of steam...  I had all the ingredients so wanted to do it before the cream went bad.  I made the crust and the filling the night before as there is a long period of time that it needs to set.


CRUST:
  • 24 Oreo cookies
  • 1/4 c. melted butter

FILLING:
  • 12 oz. (2 cups) semi-sweet chocolate chips
  • 1 & 1/2 c. heavy cream, divided
  • 1/4 c. powdered sugar, sifted
  • 1 tsp. pure vanilla extract

GANACHE:
  • 12 oz. semi-sweet chocolate chips
  • 3/4 c. heavy cream
  • Flaky sea salt, for garnish (I used Maldon)

First was the crust which was pretty easy.  Pulse in food processor until coarse crumbs, add butter and process again till combined well.


I pressed this into a glass pie plate and tried to make the crust as even as possible.  It was hard getting it up the sides.


I had my doubts about this crust while I was pressing it in, but hoped I was wrong...it just didn't feel like it would hold together.  I put it in the fridge for an hour.

In the meantime, I made the filling.  There are 2 steps to it.  Add chocolate chips and 3/4 cup cream to a microwave-safe bowl. Microwave on high for 1 to 2 minutes, stirring every 30 seconds, until smooth.


Cool to room temperature.


Stir in sugar and vanilla and set aside.  In the bowl of a stand mixer, beat remaining 3/4 cup cream until soft peaks form. Beat in chocolate mixture 1/3 at a time until well mixed.


Spoon filling into chilled pie crust and smooth top.


Refrigerate until firm, about 6 hours.  I put mine in overnight, covered, sitting in a pie container I got from Costco when I bought a chicken pot pie one time.  

Just before serving (I did this in the morning), add chocolate chips and cream to a microwave-safe bowl and cook on high for 1 to 2 minutes, stirring every 30 seconds, until smooth. Spread over top of pie and let cool. Sprinkle with flaky sea salt.


I put back in the fridge until it was time to serve.  It reminded me of something I had made before...yes, this...that one was easier to make too, lol.  Oh well...I was right about the crust too, it was caked hard and didn't come up easily.  Well, at least my son wasn't concerned about presentation, he said it was decadent and delicious...


He loves the salt on it best, I think...
