Keto Pizza

I had to try this when I saw it.  I've never really had a good pizza crust that is not made with real white death flour of some sort...I had no idea what size this would make but it made a large pizza.  What I used:

  • 2 1/2 cups blanched almond flour, (I added garlic granules & oregano)
  • 3 cups low moisture mozzarella cheese, grated
  • 1/4 cup cream cheese (from a brick, not a container)
  • 2 large organic eggs
  • Pizza sauce, as needed (I used strained tomatoes)
  • Mozzarella cheese, grated
  • Red onion, sliced
  • 1 orange bell pepper, sliced
  • 1 teaspoon pizza seasoning
  • Crushed red chili peppers, as desired
  • Pepperoni
  • Extra-virgin olive oil, for brushing dough

  • Preheat the oven to 400°F. Lightly grease a pizza pan or baking sheet and set aside (I cooked mine right on the parchment paper).


    In a mixing bowl, whisk the almond flour ensuring there are no clumps. In a microwave-safe bowl, add the mozzarella cheese and cream cheese and microwave in 20-second spurts until mostly melted (Took me 90 seconds, 3 x 30).  


    Mix the cheeses together until well combined, then add the almond flour, then the eggs. Mix together until a sticky dough remains (My oiled hands worked for this though I'd use a food processor next time).


    On a large baking sheet, place a large piece of parchment paper. Transfer the pizza dough on top of it. Place a second piece of parchment paper over it. Using a rolling pin, roll out the dough until a half inch in thickness. Remove the top piece of parchment paper and use your hands to shape the dough into a pizza shape and smooth out the crust.


    Place the pizza dough onto the pizza pan and bake for 12 minutes, until firm (below):


    Remove the crust from the oven. Top with the pizza sauce, cheese, and toppings.



    Lightly brush the sides with olive oil and place back in the oven and bake for 10-12 minutes, or until golden around the edges and the cheese has melted.


    Remove the pizza from the oven and slice and serve.


    Well damn, I have to say this is the best low-carb dough I've made/tasted to date! 


    It was crispy on the bottom (above pic) which is what you want with pizza.  So filling as well!  I am always too heavy with toppings so we had to use a fork to shovel it in.  Yes though!  Easy peasy and great option instead of processed white flour garbage we get here in Canada.
