I had leftover pork shoulder from our Sunday roast last night so looked around at what I had in my fridge/pantry. I came up with this after pondering countless casserole ideas in my head made with rice, pasta or potatoes. I finally decided on beans instead.
Cooking is my hobby and I love it. It relieves my stress. I use recipes as a base line...I find a few and compare. Then I make my own personal concoction from what I've learned. This blog has become my personal cooking journal. It helps me remember what I've made/liked and didn't. But mostly, this is for my son. I hope he makes some of these dishes one day...One of the nicest things he's said to me is that he's never had a bad meal with me, at home or at a restaurant (research wins!).

Instant Pot: Beef Shank Noodle Soup
I ordered beef shank online from an Asian grocery store and received a 2 pound boneless hunk of meat. It wasn't the "osso bucco" I dreamed of and was planning to make so I thought I'd try a soup in the instant pot. I also bought new ramen bowls from Japan so I was very happy to try noodle soup in them! This was my creation and it was made with all I had in the fridge/pantry:

Overnight Clotted Cream
I found I was able to buy organic cream that is 36% milk fat here so I wanted to try making overnight clotted cream. Of course it would be served with scones.
