I ordered some Italian ingredients from a local shop here. With the fresh basil I received I immediately thought about making a Caprese salad, but didn't have any mozzarella, fresh or block. So, I decided to just try it with the Gorgonzola cheese I ordered which essentially is an Italian bleu cheese. This one was mildly sweet.
- Cherry tomatoes, about 20 halved
- Fresh basil, a few leaves torn
- Extra virgin olive oil, a swirl
- Balsamic vinegar glaze, a swirl
- Couple of handfuls of organic baby arugula
- 1/2 a red onion, sliced thinly and soaked in red wine vinegar
- Fresh cracked pepper and kosher salt, to taste
- 1/2 cup of Gorgonzola Dolce DOP cheese, crumbled
