Arugula, Tomato, Basil, Onion & Gorgonzola Cheese Salad

I ordered some Italian ingredients from a local shop here.  With the fresh basil I received I immediately thought about making a Caprese salad, but didn't have any mozzarella, fresh or block.  So, I decided to just try it with the Gorgonzola cheese I ordered which essentially is an Italian bleu cheese.  This one was mildly sweet.  

  • Cherry tomatoes, about 20 halved
  • Fresh basil, a few leaves torn
  • Extra virgin olive oil, a swirl
  • Balsamic vinegar glaze, a swirl
  • Couple of handfuls of organic baby arugula
  • 1/2 a red onion, sliced thinly and soaked in red wine vinegar
  • Fresh cracked pepper and kosher salt, to taste
  • 1/2 cup of Gorgonzola Dolce DOP cheese, crumbled




Mix the first seven ingredients.  Plate and top with the cheese.  Drizzle a little glaze over the cheese.  Serve!


The glaze really balanced the sharp tastes with the sweetness.  The basil was super fresh and really packed a lovely punch in taste.  Very good 15 minute salad to prep.
